What i like about his video is not just the insane speed at which these guys accurately fillet the fish, but how sharp that knife is. you can see its just steeling a little bit every few fish to maintain a high level of cutting precision. which emphasizes my point about a simpler steel easily restored will let you go for a very long time without needing a real sharpening. i would love some time to be able to see a comparison of this level of skill with someone using a fillet knife from someone like Phil Wilson using the high hardness high carbide steels and see how they fare in this type of activity.
this is the primary fish i catch and fillet and when the knife is dull you start loosing a lot of meat. so there is no doubt in my mind that the knife is a good sharpness level
